Come Thursday These Left-Over Ideas Will be an Absolute Must!

Christmas Day has come and gone, and despite careful planning, there’s still an abundance of leftover food. Now, we all know of Monica’s special turkey sandwiches, complete with the moist maker! But if that doesn’t take your fancy, check out some of my favourite Boxing Day recipes below:

Festive Loaded Roasties

For leftover roast potatoes and pigs in blankets, try these Festive Loaded Roasties from The Cardiff Mum. She has partnered with Aldi, so the recipe is hosted over there. It comes together in just 20 minutes and includes gravy as the sauce — like a snack-sized Christmas dinner! Check out the recipe here.

Crispy Sprout Bhajia and Confitted Carrots and Parsnips

For Brussels sprouts, it’s the recipe I shared last week. Both raw and cooked sprouts can be used, and for those who absolutely despise them, the twice-cooking method and Indian spices help mellow out the flavour. Find the recipe here.

Mini Bubble and Squeak Cakes

Some of you, like me, herald mashed potatoes as the superior way to serve the starchy spud — as opposed to classic roast potatoes. In this case, making mini bubble and squeak cakes with leftover mash and sprouts is a no-brainer. I don’t follow a recipe for these, as it’s really flexible — simply mix together leftover mash and sliced sprouts. Add some flour if your mash is too loose, season well, and form into little cakes. Fry them off in some butter until golden. These cakes also freeze really well and make a great weaning food — simply shape them as little sausages and freeze. When you’re ready to serve, cook them straight from frozen by frying them over low heat. You’ll have finger food on tap, or rather, by the block!

The Classic Turkey Sandwich

I couldn’t leave out the classic turkey sandwich. I can’t be the only one who mashes up potatoes and any leftover roasted veg, spreading it as a thick layer on toasted bread. Chuck on some turkey, a puddle of gravy, cranberry sauce, and any other goodies you have lying around, then toast it all up on the griddle. Yum!

And when all else fails, I turn to Jamie Oliver. Here are a few of his favourite ways to use up the last of the trimmings: Watch the video here. My favourite is the leftover vegetable tarte tatin. SO GOOD!
